 1 ball Ca' Momi Pizza Dough
 1/4 cup canned coarsely puréed or ground tomatoes
 1/4 cup mascarpone
 1/2 cup shredded low-moisture mozzarella
 1/2 cup lightly packed baby arugula
 1/4 cup shaved parmigiano-reggiano cheese (use a vegetable peeler)
  Extra-virgin olive oil
  Freshly ground black pepper (optional)

In Step 10, top pizza with tomato sauce, spreading outward in a widening circle with the back of a soupspoon. Then scatter mascarpone in spoonfuls about 1 in. apart, followed by mozzarella.
