 3 oz Masumi Okuden Junmai sake
 3 oz hot water
 1 cinnamon stick
 4 cloves
 1 lemon wedge
 1 tsp Demerara sugar

Place the sake in a carafe and place it into a bowl of hot water that is not yet simmering but steaming. Let it sit for 2-3 minutes until warm to the touch.

Prewarm the mug you're going to serve the toddy in by swirling a bit of warm water around inside and then dumping it out. To the warmed mug add the sugar, hot water, and warm sake. Stir until sugar is dissolved.

Stick the cloves into the lemon wedge and place the studded wedge into the mug along with the cinnamon stick. Serve and enjoy!
