Sure, you can make a gimlet with jarred lime juice (some people say that's the only way to make a gimlet), but we love the tart, mouth-puckering power of fresh lime. Prep Time: 10 minutes. Notes: To make simple syrup: Bring 1 cup each water and sugar to a boil. It keeps, covered and chilled, up to 1 month.

 1 1/2 cups vodka or gin
 3/4 cup fresh lime juice
 3/4 cup simple syrup (see Notes)
  Ice
 6 strips lime zest (optional)

In a pitcher or large measuring cup, combine vodka, lime juice, and simple syrup. Fill 6 glasses with ice and pour 1/2 cup gimlet into each one. Garnish with lime zest if you like. Serve immediately.
