Dưa Món Dried Pickles

 4 carrots, peeled
 2 daikon, peeled
 1 green papaya, peeled and seeded
 2 tbsp kosher salt
 4 cloves of garlic, thinly sliced
 ½ small fresh ginger root, peeled and shredded
 2 ½ cups sugar
 2 cups high quality fish sauce
 4 whole small red chilis (optional)

Cut the carrots in round 1/4 inch slices. Cut the daikon and green papaya into strips about 1/4 inch thick and 3 inches long. Wash the vegetables with the salt then rinse under cold water. Drain and pat dry.

Preheat the oven to 200 degrees F. Spread the vegetables on baking sheets. Place in the oven on the middle rack. Let dry out for about 2-3 hours, toss the vegetables every 30 minutes. The vegetables are ready when they look completely dehydrated then remove from the oven to cool.

During the drying process, bring fish sauce and sugar to a near boil. Stir it often since it can boil quickly. Remove from heat. Let it cool completely.

Place dried vegetables, garlic, ginger, and chili peppers in a jar. Pour the fish sauce mixture into the jar and close the jar tightly. Dưa Món should be ready to eat in a few days, store in the fridge.
