Cranberry Apple Sauce

Nothing on your Thanksgiving menu is easier than cranberry sauce, whether you keep it classic or spice it up--in this case, with dried apples, which add a pleasant texture when simmered till soft.

 1 pound fresh or frozen cranberries
 3 ounces dried apples, chopped
 3/4 cup sugar
 3 whole allspice berries, crushed*
 1 whole cinnamon stick
  About 1/2 tsp. kosher salt
 1/4 teaspoon ground cloves
 1/8 teaspoon ground cardamon
  Zest and juice of 1 medium lemon
 1 tablespoon orange zest

Put all ingredients with 3/4 cup water in a medium saucepan. Simmer over low heat, stirring often, until most of the cranberries have popped and apples are tender, 10 to 15 minutes. Remove cinnamon stick and add sugar and salt to taste.
