1 1/2 pounds Granny Smith apples
 1 pound rhubarb, rinsed
 1 orange (about 1/2 lb.)
1 cup firmly packed brown sugar
 1/2 teaspoon ground cinnamon
 1/8 teaspoon ground cloves
 2 teaspoons minced fresh ginger
  About 3/4 cup all-purpose flour

 1/2 cup granulated sugar
6 tablespoons (3/8 lb.) butter or margarine, in chunks
 1 cup whipping cream
 1 tablespoon powdered sugar
 1 teaspoon vanilla
