It’s no secret that Pinot thrives in the Dundee Hills’ rich volcanic soil, but Red Ridge Farms was the first to test growing olives in it—and now ranks as Oregon’s largest producer of olive oil. Visiting feels like a window into Tuscan life, from strolling between silvery olive-studded trees to touring the mill and tasting the fruity, grassy oils. Come summer, Red Ridge’s 120 bucolic acres are navigable by smell alone—lavender blooms on the hills, sage and tarragon leaf out in the nursery, and fragrant jasmine coils around fence posts. Stop by the gift shop for a little magic to go: lavender soaps and bottles of olive oil made from ingredients grown on-site.
