With Café du Nord downstairs, the Swedish American Hall has new life upstairs in the form of upbeat Aatxe, a Basque-inspired outpost that takes Northern Spanish concepts for a California spin. Chef Ryan Pollnow, the veteran of a Michelin-starred San Sebastián kitchen, culls lightly from the tapas canon, but standards like patatas bravas play a smaller part on his menu than cross-cultural riffs such as ramp and morel croquetas, and olive oil–poached radishes, salted with anchovies and tossed with bits of lamb belly and mint. Everything, from the seafood conservas to the meaty cazuelas, is built for sharing, and the bar, backed by some 60 varieties of gin, has the energetic vibe of the late-night hangout Aatxe clearly aims to be.
