This month, you can treat your taste buds to bloom-inspired ice cream, thanks to the inventive minds at Salt & Straw.

The Portland-based artisanal scoop shops are unveiling their seventh annual May Flowers series this week, with flavors like Orange Blossom Sorbet with Edible Flowers, and Rhubarb Crumble with Toasted Anise. They’ve also teamed up with local makers for flower-infused flavors, using Bee Local’s honey in their Wildflower Honey with Ricotta Walnut Lace Cookies, Steven Smith Teamaker’s brew for peachy White Petal & Osmanthus ice cream, and Heart Coffee Roasters’ Ethiopian roast to create the Cold Brew Chamomile Sorbet.

The flavors will debut in Portland locations on Friday, and will be available through the end of the month. Don’t live in Oregon? Don’t fear: non-local ice cream lovers can also get their hands on the bouquet of flavors online.
