When direct from the farm wasn’t fresh enough for Chef John Sedlar of LA’s Playa, he decided to grow their own–on the roof.

They settled on 35 compact, drip-irrigated towers to cultivate pac choi (also referred to as bok choi), rare tomato varieties, manar cucumbers, borage flowers, and fresh black garbanzo beans (so amazing when eaten fresh! I grew them long ago for the One Block project).
