Whoever said eating healthy can’t also be fun? Get a variety of colors into your diet with these vibrant layered fruit smoothies, filled with ingredients needed for a nutritious start to your day.

Start making your fruit smoothie by freezing chopped bananas, strawberries, mango, roasted sweet potato (for hue and a dose of vitamin A!), and pineapple on a parchment- or wax paper-lined cookie sheet. Moisten thin non-frozen strawberry slices with water and place at bottom of your glasses, lining the outer rim for visual interest. Create the first strawberry layer by adding yogurt, frozen bananas, frozen strawberries, honey, lemon zest, and lemon juice to a blender and mixing until smooth. Divide that mixture between your glasses and set aside in the freezer.

After rinsing your blender, start the next fruit smoothie layer by mixing yogurt, frozen mango, frozen sweet potato, honey, lime zest, and lime juice until smooth. Gently layer this mango mixture atop the strawberry mixture in your glasses, using the back of a spoon to create a clean horizontal surface for your next layer. Set these glasses aside in the freezer, rinse your blender, and add in yogurt, frozen pineapple, honey, ginger, and coconut flakes. Mix until smooth and divide between glasses. Top with coconut flakes and enjoy your colorful, healthy breakfast!
