First, make the cookie bars. Whisk together flour, almond flour, coconut flakes baking powder, baking soda, and salt in a large mixing bowl. Use a mixer and beater to stir sugar, butter, and brown sugar: cream until fluffy. Add raw egg to the mixture then beat once more. Then toss in lime zest and the juice of a lime, adding citrus flavor to taste. Pour in vanilla extract and beat.

The dry flour combination should be added into the mixer in three rounds for optimal mixing, letting the ingredients incorporate slowly. While beating, line a baking dish with parchment, preparing to heat. When there are no visible clumps, guide the mixture into the dish, fattening across the width evenly from corner to corner. Bake in the oven and let stand.

While the cookie bars cool, gather the ingredients for the icing. You’ll need matcha powder, warm milk, powdered sugar, and vanilla extract. Mix together in a bowl. Coat the cake with the green mixture, applying even strokes with a large cooking spoon. While the frosting chills, mix together milk and powdered sugar in a small mixing bowl. Whisk together, then add drops of black food coloring.

Returning to the cookie bars, trim edges and cut into rectangular squares. Smear on a smooth layer of the matcha frosting. Then, using a pipette, try your hand at mimicking Frankenstein’s distinctive hairline, mouth, and scar. Place candy eyes on each cookie to make the look complete.
