With no permanent address and no phone number, Ludo Lefebvre’s LudoBites was the West’s first important pop-up restaurant. The mad rush for reservations supposedly crashed OpenTable, and seats for the first “tour” were gone in less than a minute. When news of the next tour surfaces, get ready to pounce for a reservation.
