Where but Portland, the land of 600 food carts, could you open Lardo, a temple to meaty goodness that comes with a double farm-to-table pedigree? Chefs-owners Rick Gencarelli and Adam Parziale hail from the Inn at Shelburne Farms in Vermont, a top farmstead restaurant, and now serve crisp pork belly and farm egg sandwiches out of a tiny Cape Cod cottage on wheels. The porchetta is a three-napkin affair; the fries, cooked in rendered leaf lard, are a triumph. $; lardopdx.com
