Industrial chic meets fancy frat house at Von’s, the Pine Street bar turned waterfront bistro. In its location across from the Seattle Art Museum, Von’s introduces the city to frics, Austrian-style pizzas made with a chewy 48-hour sourdough crust and fired in an 850° oven fueled by almond wood. The bar, with more than 1,000 spirits, can be overwhelming, but for a little fun, stick with the European theme. The alchemist at the bar makes a mean French 75 by pouring gin and lemon juice over a pillow of spun sugar before splashing in Champagne. And the French onion burger comes piled with sherry-caramelized onions and emmenthal cheese. For those dining solo, the seats next to the vinyl station are a marvelous spot to browse the album list at the back of the bar bible.
