In Hollywood, being well-connected is essential. At Trois Mec, it’s your Internet connection that counts. If you’re not online
at 8 a.m. on the right day, you don’t have a prayer of scoring a reservation at the buzzed-about 26-seat restaurant. The venture
from lauded local chefs Ludovic Lefebvre, Jon Shook, and Vinny Dotolo requires registration and prepayment online; every other
Friday, reservations open up for the following several weeks. For $75 plus tax and gratuity (drinks not included), you can
buy a ticket for a set five-course meal designed by Lefebvre. An early menu included bone marrow custard with peas and shallots;
Ibérico pork with sauerkraut and mustard; and tonka bean ice cream with berries, hibiscus, and Sichuan peppercorns. Enter
Trois Mec (loosely French for “three guys”) through the door beneath a sign that still reads Raffallo’s Pizza.
