Cocktail culture is percolating its way into coffee at Theorem, a new six-seat “craft coffee” bar and offshoot of the Portola Coffee Lab at the oc mart Mix indie mall. Baristas here apply bartending trends, like barrel aging and using bitters, to caffeinated drinks. Look for surprises like iced coffee old-fashioneds, liquid nitrogen affogato, and the Filtron Fizz with coffee, egg whites, grapefruit, lemon, and peach reductions.
