Ken Norris, the chef at Pearl District hot spot Riffle NW, also happens to be a keen fisherman, so it’s no surprise that the menu here stars updated seafood classics like creamy mussel and halibut chowder and Dungeness crab rolls. But what’s more interesting is the way he uses undersung local catch seldom seen at other fish restaurants—think smoky grilled mackerel, buttery pan-fried sand dabs, and crispy Oregon bay shrimp, served head and all.
