At Per Noi Trattoria, Francesco Montino from Naples and Tony Casella from Sicily make authentic dishes that play to their strengths, from the gnocchi to the arancini (deep­ fried rice­ and­ mozzarella balls). “I make the pasta; Tony makes the sauce,” says Montino. “Sicilians make the best sauces.”
