After years of training with a Japanese chef, Peruvian chef Ricardo Zarate has created an izakaya-inspired menu to show off the tastes of his native Lima in nearly 70 small plates. Standouts include seared Wagyu beef, squid ceviche, and the namesake paiche, an Amazonian fish served in lettuce wraps or as sashimi or a stew. Whatever you do, order enough yucca-and-manchego beignets for the table.
