Take one step into Oola Distillery on Capitol Hill, and you’re instantly immersed in the world of Seattle distilling. There’s
a hint of yeast in the air (a product of fermentation), and bottles of Oola’s spirits line the walls of the spacious sales
room, where a window provides a peek at the large copper still. There, you might see distiller Kirby Kallas-Lewis, surrounded
by the tubes and belly of the still, stirring a barrel of his signature vodka with an ancient canoe paddle from New Guinea.
