Leave it to Top Chef alum Michael Voltaggio to put a new twist on a classic sandwich. The Reuben is made with sliced beef tongue,  gruyère cheese, and some quick sauerkraut. The sandwich is warmed in the oven until the cheese melts, and then topped with a drizzle of Russian dressing--equal parts ketchup and mayonnaise with a handful of chopped cornichons and grated fresh horseradish.
