Since 1944, the Santa Maria Elks Club Rodeo has been a summer fixture—with classic Santa Maria–style barbecue for hundreds at night. Teams of barbecuers from the Elks Lodge impale hunks of top sirloin on 6-foot skewers and grill them slowly over mobile pits, often along with chicken and other meats.
