The star of the show is the 3,000-pound smoker trucked in from Missouri and seasoned for three weeks before use. Texas-style meats--including Angus beef ribs, brisket, chicken links, and pork shoulder--are accompanied by beer, cocktails, and everything from mac ’n’ cheese to fried okra.
