It’s become de rigueur for restaurants to home in on a particular dish, dedicating the better part of the menu to variations on, say, meatballs, rice bowls, or mac ’n’ cheese. That’s why Gjusta—and its staggering, all-encompassing scope—comes as such a refreshing surprise. Chef-owner Travis Lett tries his hand at nearly everything, and he does it all exceedingly well. Inside the industrial space, there’s a smoker producing stand-out brisket and porchetta; salad and sandwich stands; a coffee and juice bar; and a bakery that’s notably West L.A., heavy on ingredients like organic grains, nut milk, and avocado. It’s a bit like a food court with a very gourmet bent—the rare place your food-snob friend and picky toddler can both be happy.
