Ca' Momi, a bustling restaurant in Napa, California, is known for its rigorously authentic Neapolitan-style pizza. This one--its name translates as "capricious"--can be found throughout pizzerias in Italy, says Dario De Conti, the restaurant's head pizza maker and co-owner.
How to Make It

In step 10, top pizza with tomato sauce, spreading outward in a widening circle with the back of a soupspoon. Then sprinkle on mozzarella, prosciutto, sautéed mushrooms, and artichokes.

2 ounces very thinly sliced prosciutto cotto (Italian-style uncured ham) or freshly sliced uncured boiled ham, torn into large shreds
3 ounces drained marinated artichokes, sliced into thin wedges
