3 Genius Ways to Use Trader Joes’ New Mini Avocados

If there are three things everyone is currently obsessing over, they’re mini foods, avocados, and Trader Joe’s. So the fact that Trader Joe’s now sells mini avocados might be the single best thing that’s happened this year. We actually tested out mini avocados a few months ago when we spotted Shanley Farms’ Gator Eggs on FreshDirect. But there’s something about Trader Joes’ packaging—the 6-count bags are labeled “Teeny Tiny Avocados”—that has us smitten. Plus, grabbing them is convenient: we frequent the cult-favorite store for our weekly grocery trips, making this new purchase an easy addition to our cart. Each bag retails for $2.69.
But we love the avocados for more than just their adorable size. A serving size of an avocado is 1 oz., which is about 1/5 of a regular-sized avocado. That’s equivalent to about half a mini avocado. So instead of two people sharing half of a regular-sized avocado (and then storing the other half in the fridge, forgetting about it, and having it turn brown), they can share the entirety of a mini. To celebrate their release, we’ve come up with three simple recipes (meant to serve 2) where a mini avo just makes sense.
  1. Avocado Egg Salad: Combine two hard-boiled eggs, a dollop of Dijon mustard, a squeeze of lemon juice,1/4 cup chopped celery, and one mini avocado in a medium-sized bowl. Season with kosher salt and black pepper, and mash with a fork until combined. Serve on whole-grain toast with a slice of juicy tomato.
  2. Avocado and Chickpea-Stuffed Sweet Potato: Cut the mini avocado into slices and divide between two baked sweet potatoes. Top with chickpeas, feta, kosher salt, and black pepper. Finish with fresh herbs and a dollop of hummus or tzatziki.
  3. Single-Serve Guacamole Cups: Cut the mini avocado in half and remove the pit. Score each half, making squares. Add a squeeze of lime juice, kosher salt and black pepper, and a dollop of salsa. Scoop out the guac with chips or veggies.
