How to Make a Kid-Friendly Camp Meal

Of all our favorite camping meals, hobo bundles is one of the most tried-and-true easy camping meals to make. By cooking the full dish in a tin foil pouch, this campfire meal involves very little clean-up and its simplicity makes it a kid-friendly recipe, not only in terms of appealing to kids’ potentially picky palates, but also in terms of a meal the little ones can help prepare at camp. In this campfire cooking version, meatballs get a tasty upgrade with fresh herbs and parmesan. (For a head start, you can even make the meatballs at home; freeze them, pack in your cooler, and let them thaw before you make the meal at camp.)

You’ll heat a charcoal grill or wood-fired grill to medium heat and cut sheets of heavy-duty tin foil into squares. Brush or rub the center of each with a little oil. Mix the meatball ingredients well in a large bowl, and then shape the mix into balls, setting three in the center of each foil square. Chop potatoes, onions, and carrots into big chunks, and divide among the squares. Fold each square by bringing two opposite sides of the foil together across the middle and making a seam one inch wide. Fold the seam on itself again, then fold it flat on the packet. Fold the ends on themselves about one inch, then repeat to seal the packet securely. Set packets on the hot grill and cook, turning over with grilling tongs every 10 minutes, until the vegetables are tender and the meatballs are cooked through, about 30 minutes total.

Once you’ve safely removed the contents of each packet and placed them on plates, garnish each plate with snipped or torn parsley and basil leaves and shredded parmesan. Now you’ve got a camping meal the whole family will love!
