Mediterranean Coriander Roast Chicken

This seasoning keeps the skin crisp, making it a great choice for our Ultimate Roast Chicken or Best Last-Minute Roast Chicken recipes.

For the Mediterranean Coriander dry rub, combine 2 tbsp. coarsely ground coriander seeds (grind in a spice grinder or mortar), zest of 1 lemon, and 3 tbsp. olive oil. In step 2, smear some mixture in pockets and the rest all over outside of chicken.
