Craving something sweet? This orange-chocolate mug cake will hit the spot on a chilly evening. After cutting an orange vertically from the pip into rounds, place a single round in a liquid measuring cup. Add water. Cover the cup with saran wrap and place in the microwave. Heat in the microwave on high for four minutes, allowing the juice of the orange to seep into the warm water. Place the drained orange round into a food processor, and whirl until the pieces are finely chopped. Keep the rinds in the processor while you add almond flour, melted butter, sugar, baking powder, and salt. Crack an egg into the powdery blend and then place the top of the processor back on to mix the ingredients together, pulsing until blended. Use a wooden spatula to direct the concoction into a mug, filling it about ¾ of the way. Add dark chocolate chips and mix with a spoon. Microwave on high for two minutes. Expanding under heat, the concoction will rise over the top of the mug like a muffin-top. (Note: be careful not to fill the mug too much before microwaving for this reason.) Take care when removing the mug from the oven, using oven mitts to protect your hands. The mug’s handle can become very hot depending on its material. Stick a toothpick into the cake—if the cake sticks, place the mug back in the oven for an additional minute or so. Use a sifter to sprinkle powdered sugar atop the cake. Let cool for a minute then dig in to this scrumptious treat, savoring each bite of melted chocolate and moist cake.
