Exploring an ethnic food market is like digging for treasure. But for those with no time to dig, many of these treasures are making their way into the mainstream. Garam masala, for instance, an Indian spice blend, is now made by Spice Islands and Spice Hunter, both big players at the supermarket. Each version is a unique blend of spices that can make simple meat, fish, poultry, and vegetable dishes quite sophisticated. These flavorful garbanzos, from my Indian friend Ranjan Dey, make an excellent vegetarian main dish.
