These dairy-free, creamy popsicles are made with a simple chia pudding base. Shake chia seeds, coconut cream, and agave nectar in a jar and set aside until the chia seeds have expanded to create a thick pudding. Next, mix remaining coconut milk with the zest and juice from two limes in a measuring cup with a pour spout. Add your sugar and shredded coconut before whisking it all together. Assemble your popsicles by layering the coconut milk mix, spoonfuls of chia pudding, and crushed raspberries in the molds until they are full. Slide in popsicle sticks and freeze for at least four hours before popping out one (or all!) of these vegan, low-sugar popsicles to enjoy.
