You’ve got a ton of leftover mashed potatoes from your Thanksgiving feast, but you’re feeling a little tired of eating them as-is with gravy? Enter the waffle iron for the tastiest holiday leftovers hack ever, the perfect day-after breakfast that will dazzle your family and holiday houseguests.

Heat up an all-clad or stainless steel, Belgian waffle-style waffle iron. Place three cups of mashed potatoes in a large mixing bowl. Add three quarters of a cup of flour, a teaspoon of salt, and two large eggs; mix well with a wooden spoon. Then mix in one-and-a-half cups of shredded sharp cheddar cheese and two chopped green onions. Open the waffle iron and spray with non-stick cooking spray. Add a half-cup of the potato mixture for each quadrant of your waffle maker. Close it and cook for five minutes.
