Turkey Tostadas, Yucatecan style

Salbutes ― crisp little handheld tortillas topped with shredded turkey, avocado, pickled onions, and cabbage or lettuce ― are a popular street food in the Yucatán region of Mexico.

Mini tostadas are a great way to stretch your leftover turkey. Serve them as a starter before a big Mexican-inspired meal, or plan on everyone eating 3 to 4 as dinner.
