Beehive Smoked-Trout Rillette

Janice Henning and Tim Elenteny of Denver's Beehive Restaurant focus on regionally produced fruits, vegetables, cheeses, meats, and fish to give their menu a rich sense of place. Recently, they put together a special event for me, and among the Rocky Mountain treats was this very simple and flavorful smoked-trout rillettes.

Rillettes may be French at heart and traditionally made from shredded slow-cooked meats, but there is nothing fishy about this updated version.
