Gardeners know this, and so do their neighbors: Summer squash yields prodigious crops from just a few plants and continues producing for weeks.

To keep up with the production, start harvesting 50-65 days after sowing, when the zukes are 4 to 6 inches long, or smaller.

Some recipes, such as our Porcini-Zucchini Blossom Orecchiette, above, even call for tender zucchini blossoms.
