During the holidays, with so many gatherings waiting to happen, weeknight meals sometimes need to be worthy of company. But more than ever, minutes are scarce. Salmon is the perfect entrée for the times — simple and easy to dress up. A sweet, tangy soy glaze will please even people who aren't crazy about fish. Serve the salmon with sushi rice if you have time, or simply steam some fragrant jasmine rice. Then pop open a bottle of sparkling wine, or pour some cold Tsingtao beer to match the spirit of the glaze.
