Tofu-Pine Nut Lettuce Wraps

These protein-rich wraps make a fun party appetizer or a light meal.

Tofu fans know that this great vegetarian food offers more than most single ingredients: It comes in a range of textures that work in almost any kind of cooking. Go for the extra-firm kind called nigari tofu when you want a hearty dish. The moisture has been pressed out of it, so it stands up to grilling and sautéing.

Stir-fry nigari tofu with a mix of salty, sweet, and sour seasonings, add pine nuts for some crunch, and you get a lively filling for a wrap.
