Plum Portrait Tart

Heat makes a delicious impact on any red or purple plum. The skin blossoms with floral aromatics and develops a significant tang that seeps into the fruit as it softens while cooking. And when plum slices are neatly arranged on a thin layer of quickly prepared, firm-textured cake batter, they settle in as they bake, each pale to rosy fruit segment framed by a dark rim. The result is a simply beautiful summer dessert.
