The perennially popular yogurt smoothie ― a lively refreshment to begin with ― reaches new heights with refined combinations of fruit and spices. Two of our recipes are inspired by Indian lassi, sweet or savory yogurt drinks intriguingly spiced with cardamom, cumin, or the like. The tomato raita, with its tangy blend of yogurt and cucumber, makes a surprisingly delicious ice-cold drink.
From smoothie to slushy: All of these mixtures ― including the raita ― go beyond refreshing to addictive when frozen but still soft enough to slurp through a straw. Pour them straight from the blender into an ice cream maker (11/2-quart or larger) and freeze according to the manufacturer's directions until they hold soft mounds, 10 to 12 minutes.
