Fresh Fennel has feathery leaves that resemble fresh dill and a fist-sized edible white bulb that resembles the bottom of a celery stalk. Contributes a licorice aroma and taste. Available from fall through spring in produce markets and the produce section of large supermarkets. Look for smooth white bulbs and fresh, unwilted leaves. Refrigerate in a plastic bag for up to four days
