Another of their virtues is that they can be cut into any size you choose ― bite-size squares look elegant on a cookie plate, while bigger squares are the perfect partner to a tall glass of cold milk. Helpful hints:

• Use a sharp knife to cut bars into squares or rectangles; if they're very moist or sticky, wipe the blade of the knife clean between each slice.
